Combining a vast culinary culture and a deep love of fine food, Arnaud has become one of the leading ambassadors for Nordic-inspired cuisine and products sourced from Québec.

Chef and co-owner of Chez Boulay – Bistro boréal since 2012, and Les Botanistes, which opened in spring 2019, he is committed to promoting the exceptional products that are native to his adopted home. A talented and inspiring figure, Arnaud encourages up-and-coming chefs to build on Québec’s unique culinary identity by creating a cuisine that offers a blend of local terroir and international influences. Arnaud is also the ambassador for the Aliments du Québec au menu program.
